An introduction to the varied ingredients of Lebanese food, as taken from our second cookbook.


Choose well-flavoured honey for the best flavour in Lebanese cooking. I found one of my favourite honeys at the Souk el Tayeb in Beirut, run by my friend Kamal Mouzawak. There they have honey from bees that collect the nectar from cedar and oak trees, and the resulting honey has an opaque terracotta appearance and a curious caramel flavour.
